Albariño La Val Sobre Lias - White Wine, from Bodega La Val, is a white wine from the Rías Baixas region made exclusively from the Albariño grape variety. This wine is produced only in years of exceptional quality, when the harvest presents a profile suitable for a long aging process on fine lees in stainless steel for 3 years, a meticulous process that seeks to reveal the full depth and potential of the grape.
The grapes are harvested by hand, followed by cold maceration for 6 hours and then pressing. The cleared must ferments in stainless steel tanks for two to three weeks. After selecting the harvest destined for aging, fine lees chosen from the same harvest are added, with continuous batonnage over three years, renewing the lees as fermentations finish.
In the glass, it presents a very bright straw-yellow color with expressive greenish reflections. The aroma reveals high intensity and great complexity, with ripe white fruit, floral notes, balsamic hints of bay leaf, citrus fruits such as grapefruit, and a mineral background. On the palate, the aromatic sensations linger with fruit, bay leaf, and citrus, supported by a lively acidity that brings freshness, flavor, and persistence, in a profile associated with great Albariño wines.
It is recommended to serve at 12ºC. It is an excellent choice to accompany baked or cooked fish with sauce, seafood, fresh and semi-cured cheeses, foie gras and white meats.
