Sede e Fame As Ermitas - White Wine is a white wine from Valdeorras produced by Virgen del Galir from Palomino Fino grapes from old vines. Made using traditional methods, it ferments in amphorae and ages for 24 months, revealing a unique interpretation of the grape variety and the territory, marked by granite and quartz soils.
In the glass, it presents a bright straw-yellow color. The aroma is subtle and austere, with an incisive profile, iodine hints, balsamic notes, and suggestions of damp rock. On the palate, it is sharp and precise, with good acidity, where verticality and tension combine with a saline minerality that gives it personality and character.
It is an expressive and gastronomic white wine, ideal for serving at 10ºC. It pairs very well with fresh seafood, fish, seafood rice dishes, mild and creamy cheeses, as well as spicy dishes from Arabic cuisine. The name Sede e Fame evokes the two faces represented in the sanctuary of the Order of Charismatic Hermits, a place of great influence in the region and visible from the winery.
