Chan de Prieto Pariente - White Wine is a white wine from Bodegas José Pariente made exclusively from the Godello grape variety in the Bierzo region. This wine stems from the Pariente family's desire to interpret a unique wine-growing area, renowned for its location and the presence of some of the oldest vines in the world. From a vineyard planted at an altitude of 607 meters in Cabañas Raras, it seeks to precisely express the soil and the strong connection of Godello to Bierzo.
In the glass, it presents a bright greenish-straw color. Aromatically, it reveals good intensity, with notes of white fruit and citrus, accompanied by hints of hay, spices, and a delicate mineral touch, composing an elegant and expressive whole. On the palate, it stands out for its angular acidity and tension, combined with a saline texture that gives it freshness and definition. It is a wine with volume, character, and a silky finish, showing its own identity and a profile that is simultaneously precise and enveloping.
Alcoholic fermentation takes place in stainless steel tanks and used French oak barrels, contributing to the complexity and balance of the whole. It should be served between 9 and 12 ºC. At the table, it pairs especially well with intensely flavored fish, shellfish, white meats, and a wide variety of cheeses.
