Ermita de San Gregorio Reserva - White Wine is a white wine from Rioja, created by Jesús Madrazo, from grapes sourced from the high, cool areas of the Sierra de Cantabria. Made primarily with Viura and a small percentage of Malvasía Rojal, it presents a careful and precise profile, resulting from manual harvesting, direct pressing with carbonic snow maceration, fermentation in stainless steel, and partial aging in new French oak barrels and a small proportion of acacia wood.
In the glass, it reveals a clean and bright golden-yellow color. The aroma is straightforward and intense. On the palate, it is an enveloping wine with a mature sensation, a rich and unctuous texture, a long finish, and a very well-integrated acidity that gives it balance and freshness. Three months of aging on fine lees, followed by another five months in barrels before bottling, contributes to its complexity and depth.
It is recommended to serve it not too cold and to open the bottle about half an hour before consumption, for better aromatic and gustatory expression. At the table, it is an excellent choice to accompany firm-fleshed fish, such as monkfish or turbot, and also pairs very well with poultry and white meats.
