Chão dos Eremitas Os Paulistas - White Wine is a white wine from the Alentejo region produced by Fita Preta, made from the Alicante Branco, Roupeiro, Tamarez and Rabo de Ovelha grape varieties. It has a citrine yellow color and a delicate aromatic profile, highlighting notes of linden, citrus and dried leaves, creating a subtle and elegant whole.
On the palate, it reveals itself as fresh and balanced, with vibrant acidity and an unctuous texture that gives it depth. The milky notes, reminiscent of cream, add smoothness and complexity to the palate, harmoniously prolonging the tasting experience. It is a white wine that combines freshness and texture, showing a very appealing gastronomic character.
This wine originates from vines planted in 1969 at the foot of the Serra d'Ossa mountain range, in almost basic granitic soil. Its name evokes local history: in 1397, a Papal Bull exempted the "Paulists," hermits linked to these lands, from taxes on their vineyards. A wine with identity and connection to the place, ideal to accompany oily white fish, such as sea bream or grouper, as well as dishes with cream or butter.
